1. Philly Cheese Steak Cups

    • Serving: 12 Appetizer Portions
    • Prep Time: 15 Minutes
    • Cooking Time: 40 Minutes
    INGREDIENTS
    • (2) 8oz Certified Angus Beef Top Sirloin Steak
    • (2) tsp canola or vegetable oil
    • (1) small yellow onion; thinly sliced
    • (1) bell pepper, yellow or red, seeded and cut into thin strips
    • (1) tsp salt
    • (1/2) tsp pepper
    • (1) 12-count standard muffin tin
    • (2) tubes (8oz each) crescent dough sheets
    • (8) slices provolone cheese; cut into thirds
    • Non-stick cooking spray
    • All purpose flour; for dusting 
    PREPARATION
    1. Preheat oven to 400°F. Heat oil in a large frying pan on medium high heat. Sear top sirloin steaks 2-3 minutes per side to develop a deep brown crust; transfer to cutting board.
    2. Turn the pan heat down to medium and sear peppers and onion, stirring often until slightly soft and browned on edges, about 3 minutes; transfer to a mixing bowl. Cut steaks into super thin 1/2-inch wide ribbons; toss with peppers and onion and season with salt and pepper.
    3. Lightly spray muffin tin with cooking spray. Lightly dust work surface with flour. Lay out crescent dough and cut each into 6 squares then round corners. Press discs into muffin tin and place a piece of provolone at the bottom of each dough cup.
    4. Discard excess liquid from steak mixture; evenly divide within each dough cup and top with remaining provolone.
    5. Bake for 8 minutes, rotate pan and bake 5-6 more minutes until dough is golden brown and cheese is bubbly on top. Cool steak cups at least 10 minutes in tin before serving.

    2. Dry Rub Chimichurri Skewers

      • Serving: 4 Servings
      • Prep Time: 10 Minutes
      • Cooking Time: 10 Minutes
      INGREDIENTS
      • (2) 8oz Certified Angus Beef Top Sirloin Steak
      • (1) tbsp dried cilantro
      • (1) tbsp dried oregano
      • (1) tbsp dried parsley
      • (2) tbsp kosher salt
      • (2) tbsp corase black pepper
      • (2) tbsp granulate garlic 
      • (2) tbsp paprika 
      • (1) tbsp dried thyme 
      • (4-6) metal skewers (or bamboo skewers soaked in water)
      PREPARATION
      1. In a mixing bowl, combine cilantro, oregano, parsley, salt, pepper, garlic, paprika and thyme.
      2. Skewer 2-3 sirloin steak cubes on each skewer and season with 2-tablespoons dry rub, reserving excess for future use.
      3. Grill skewers 1- 2 minutes per side over medium-high heat, grilling all four sides.

      3. Korean Fried Beef Bites

        INGREDIENTS
        • (2) 8oz Certified Angus Beef Top Sirloin Steak
        • (1/4) cup plus 2 tbsp soy sauce
        • (2) egg whites
        • (2) tbsp Shaoxing rice wine (or dry sherry) 
        • (3) tbsp honey
        • (3) tbsp rice wine vinegar
        • (2) tbsp gochujang
        • (2) tsp sesame oil
        • Canola, peanut or vegetable oil for frying 
        • (1) cup flour
        • (1/4) cup corn starch 
        • (1) tsp toasted sesame seed (optional garnish) 
        • (3) scallions, thinly sliced (optional garnish) 
        PREPARATION
        1. Combine 1/4-cup soy sauce, egg whites and Shaoxing wine in a mixing bowl; whisk thoroughly. Cut top sirloin cap steak into 3-inch by 1/2-inch strips; stir into marinade and refrigerate 30 minutes.
        2. In a small mixing bowl, make a sauce by whisking together remaining 2-tablespoons soy sauce, honey, rice wine vinegar, gochujang and sesame oil. Set aside.
        3. Preheat deep fryer or Dutch oven with oil to 375°F. In a shallow pan combine flour and corn starch and add marinated beef. Stir beef in breading until well coated and dry to the touch.
        4. Dust off excess breading and fry in batches; 4-5 minutes until crisp and golden brown. Remove from fryer and allow to drain briefly of any excess oil. While still hot, toss in honey gochujang sauce; garnish and serve!
