HOW TO: 15-Minute Gourmet Lamb Rack

An expertly frenched rack of lamb is an elegant centerpiece dish that is very impressive, despite only needing a short amount of active cooking time. The trick with White Stripe in particular is to not let the spices dominate the lamb, which unlike other breeds of lamb, has such a mild flavour profile.

INGREDIENTS:
- 1 X Frenched Lamb Rack, defrosted
- Salt & Pepper
- 2 tbsp x Canola Oil
- 4 tablespoons (60g) unsalted butter
- 2 cloves of garlic, crushed
- A few fresh rosemary thyme sprigs
PREPARATION:
- Season lamb rack with salt and pepper.
- Preheat oven at 350F.
- Preheat a cast iron or oven-safe sauté pan on medium high heat.
- Pour canola oil to coat the pan and sear the lamb meat side down for 2 minutes.
- Turn over and top lamb with butter, crushed garlic cloves and a few sprigs of fresh rosemary.
- place the pan in the oven for 7-10 minutes or until internal temperature reaches 135F with a meat thermometer for a medium finish.
- Remove lamb from pan and let the meat rest for 5 minutes before slicing into chops and serving. We recommend 2 chops (2 bones) per person.
- Serve with garlic butter drippings from pan.
