RECIPE: Korean BBQ Burrito Bowl

Using Certified Angus Beef Smoked Brisket Burnt Ends over cilantro rice, braised beans, roasted sweet potato, avocado salsa with sweet & spicy gochujang glaze.
INGREDIENTS
Braised Beans
- 1 pound dried black beans, picked through, rinsed
- 1 bay leaf
- 1 medium onion, finely chopped, divided
- 8 garlic cloves, finely minced
- 1 tsp dried Mexican or Italian oregano
- ¼ cup extra-virgin olive oil
- Coarse salt & pepper to taste
Roasted Sweet Potatoes

2 sweet potatoes, peeled and diced
- 1 tbsp maple syrup
- 2 tbsp olive oil
- ½ tsp smoked paprika
- Coarse salt and pepper to taste
Avocado Salsa

2 ripe avocados, diced
- ¼ tomato, diced
- ¼ small onion, finely chopped
- 1 clove garlic, minced
- 1 lime, juiced
- 1 tbsp olive oil
- coarse salt and chopped cilantro to taste
Sweet & Spicy Glaze
- 2 cloves garlic, minced
- 1 inch ginger, peeled & minced
- 3 tbsp gochujang
- 2 tbsp mirin
- 2 tbsp brown sugar
- 2 tsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp olive oil
PREPARATION
Braised Beans

Preheat oven to 325F
Bring beans, bay leaf, onion, garlic, oregano, olive oil and 1 litre of water to a simmer in a large pot. Cover with a lid and transfer to the middle rack in the pre-heated oven. Stir occasionally and add more hot water if necessary to keep beans submerged. Cook until the beans are tender, about 2½ hours. Discard the bay leaf.

When tender, remove from the oven and season with coarse salt and pepper. Allow to rest uncovered at room temperature until cool. The beans will absorb liquid as they cool.

Do Ahead: Beans can be made in advance and refrigerated for a few days, or frozen in portions.
Roasted Sweet Potatoes

Toss all ingredients in a bowl to coat well.

Transfer to a parchment lined tray and roast in the oven at 400F until caramelized and tender.

Stir occasionally to avoid burning. Approx.15 minutes.
Avocado Salsa
- Combine all the ingredients and season to taste. Cover with plastic wrap directly on the surface of the salsa to reduce browning, if not used immediately.
Sweet & Spicy Glaze
- Combine all ingredients and whisk to combine. Adjust the spiciness level as needed by increasing or decreasing the brown sugar.
ASSEMBLE

To put this dish together deep fry or air fry the brisket burnt ends until crispy and heated through.

Serve on warm rice mixed with fresh cilantro, and place your ingredients around the bowl. This dish is fun and can be eaten to your liking. The combinations of hot and cold & sweet & sour and spicy; make it customizable.
