RECIPE: Pork Tomahawk Chops With Chimichurri

You can use this recipe for 1 Sakura Farms Pork Tomahawk Rack but is easily adaptable for 2 Lamb Racks Frenched. If only using 1 White Stripe Lamb Rack, half the remaining ingredients.
PORK CHOPS WITH CHIMICHURRI
INGREDIENTS
- 1 Each Pork Rack, Cut Into Tomahawk Chops
- ¼ Cup Olive Oil
- 1 Each Lemon, Zest And Juice
INSTRUCTIONS
- Rub chops with olive oil.
- Season with salt, pepper, lemon zest and juice.
- Let marinade for 30 min. to 1 hour prior to grilling.
- Preheat grill/broiler to 450 degrees
FOR PORK CHOPS:
- Cook chops 5-6 min per side and let rest for 10 minutes before consuming.
FOR LAMB CHOPS:
- Cook chops 1-2 min per side and let rest for 10 minutes before consuming.
- Top chops with chimichurri
CHIMICHURRI
INGREDIENTS
- 1 Cup Fresh Cilantro
- 1 Cup Fresh Parsley
- 1/2 Cup Fresh Mint
- 4 Each Cloves Garlic Minced
- 4 Tbsp Sherry Vinegar
- 1/2 Cup Olive Oil
- 1/4 Cup Lemon Juice
- 1 Tsp Red Pepper Flakes
INSTRUCTIONS
- Place all ingredients in a blender and blend until smooth OR
- In a mortar, pestle all the raw ingredients and add wet ingredients OR
- Finely chop all raw ingredients and wet ingredients.
- Season with salt & pepper to taste.
