Fresh Herb Burger with Goat Cheese

- 1/4 cup of mayo
-1 tablespoon of lemon juice
-1 tablespoon of lemon zest
-1/4 cut of minced chives
- 2 tablespoons of minced parsley
- 2 teaspoons of minced thyme
- 1 1/2 teaspoon of coarse kosher salt
- 1/2 teaspoon of ground pepper
- 1 1/2 cups of baby arugula
- 4 oz of crumbled goat cheese
- 4 hamburger buns
Combine mayo lemon zest and lemon juice in a small mixing bowl and refrigerate.
Preheat the grill to medium-high heat.
Place burgers on the grill and sear for 4 to 5 minutes on first side. Flip burgers, top with goat cheese, close lid to the grill. Cook for an additional 4 minutes or until the burgers reach an internal temperature of 160°F.
Toast buns on grill until golden brown, 1 to 2 minutes and set aside
You are ready to construct your burger any way you like.
Smoked Burger With Coffee BBQ Sauce

-3 1/2 teaspoons of salt divided
-1/2 teaspoon black pepper
-1 large thinly sliced red onion
-8 oz cider vinegar
-1/4 plus 2 tablespoons brown sugar
-1 tablespoon whole peppercorns
-1 cup water
-1 tablespoon butter
-1 small diced yellow onion
-2 cloves minced garlic
-1 cup brewed dark roast coffee
-1/2 cup ketchup
-2 tablespoons yellow mustard
-2 teaspoons paprika
-4 slices of cheddar cheese
-4 hamburger bun
Place sliced onion in a heat proof bowl. In a small saucepan add 3/4-cup cider vinegar, 2- tablespoons brown sugar, 2-teaspoons salt, peppercorns and 1-cup of water. Bring to a boil, stirring until salt and sugar dissolve. Pour over sliced onion and cover with plastic wrap so that onions are well submerged. Allow to steep and pickle while preparing burgers and sauce (at least 1 hour).
Preheat the smoker or grill with your favorite wood (we like hickory and/or applewood) to 275°F. Smoke patties 45 minutes to 1 hour or until they reach 155°F internal temperature.
While patties smoke, prepare sauce by heating 1-tablespoon butter over medium heat and adding diced onion, garlic and 1/2-teaspoon salt. Saute until onions are soft and translucent, 4 to 5 minutes. Pour in coffee, 1/4-cup cider vinegar, 1/4-cup brown sugar, ketchup, mustard and paprika; bring to a boil. Reduce to a simmer and cook for 20 minutes. Once reduced, puree in a blender or with an immersion blender and strain. Yields about 1 1/4-cups.
Add cheese and close smoker or grill just to melt cheese. Build and enjoy.
In a small mixing bowl whisk together mayo , Dijon, parsley, chives and lemon juice. Place crab into second mixing bowl. Stir 2-tablespoons of mayo blend with crab and 1/2-teaspoon salt; set crab aside.
Add hot sauce, capers, garlic and Worcestershire to remaining mayo mixture and whisk well to combine.
Preheat grill to medium high.
Toast buns if desired (recommended). Grill burgers on first side for 4 minutes, flip and grill 3 to 4 minutes or until they reach an internal temperature of 160°F.

Pepper Jack Burger

-2 tablespoons minced chipotle pepper in adobo sauce
In a small mixing bowl stir together chipotle mixture with mayonnaise; set aside.
Preheat the grill to medium high.
Grill or pan-sear patties for 4 minutes, flip, top with cheese and cook for another 3 to 4 minutes or until burgers reach an internal temperature of 160° F.
