Mussel Profile


SALT SPRING ISLAND MUSSELS: This unique hybrid brings together the superior taste of the Med. mussel, with the delicate texture of the P.E.I. mussel. The plump meat is sweet and fills the shell almost entirely.


HONEY ISLAND MUSSELS: Locally raised in a pristine Lagoon located on a small island off the coast called Lasqueti Island. These Canadian mussels are packed with nutrition from omega 3 fatty acids, iron , B12 , Zinc and protein. Honey Mussels are developed through a 100% natural selective breeding process.  These Honey Mussels come come from a hard working family run business. Their distinct sweet-smoky flavor and tender plump texture can be eaten guilt free. 



*Contents of the case are LIVE and will be packed on ice or with a gel pack. The shellfish  need to be kept on ice or refrigerated once they are in your car and at home. For instructions on how to handle LIVE shellfish properly, please refer to the TAG on the product. Availability of certain items may change due to market conditions, therefore substitutions may take place. All weights are approximate.


Cooking Instructions


1. Rinse fresh mussels under cold running water for one to two minutes. Fresh live mussels should smell like the sea and naturally open and close but they may take a few minutes to respond to the rinsing, agitating and stimulation. Discard any mussels that are cracked, broken or smell bad.

2. Place enough liquid in an empty pot to cover the bottom. You only require a small amount of your favourite liquid as the mussels will be steamed, not boiled. Turn the element to high.

3. Add the mussels to the pot and cover with the lid. Keep temperature to high. If creating a favorite recipe this would be the perfect time to add ingredients on top of the mussels before placing the cover. Spices, vegetables, herbs, sauces, butter, etc.

4. For reference, 2 – 3 pounds of mussels will take 5 – 7 minutes to cook but timing may vary depending on the strength of heat, how much liquid you use, and the amount of mussels you put in the pot. Mussels are ready when shells are open and you can see the plump tender meats.

5. When the steam is pouring out from under the lid of the pot for 2 - 3 minutes, remove from heat. Let rest covered for 1 minute.

6. Tip the contents into a bowl and serve with some fresh crusty bread for dipping in the wonderful broth — It’s that simple!
